Ingredients:
For the Salad:
1 bunch of fresh asparagus, hard ends removed
1 head of romaine lettuce, washed and chopped
1/2 cup shaved or grated Parmesan cheese
Croutons (optional, for garnishing)
For the Caesar Dressing:
1/2 cup mayonnaise
2 cloves garlic, minced
2 tablespoons lemon juice
2 teaspoons Dijon mustard
1 teaspoon Worcestershire sauce
1/4 cup grated Parmesan cheese.
Use salt and pepper according to taste.
3 tablespoons olive oil.
Prepare the Asparagus:
Start by boiling salted water. Put the asparagus slivers in and cook for around 2-3 minutes until they turn tender-crisp. Take it out of the pot and put it immediately to a bowl filled with ice water to prevent further cooking. Drain and set aside.
Make the Caesar Dressing:
Begin by, whisking together in a bowl some mayo, minced garlic, lemon juice, dijon mustard, Worcestershire sauce, grated Parmesan cheese, salt and pepper.
Drizzle while continuously whisking slowly olive oil into it until smooth and creamy then adjust seasoning to taste.
