Chicken Quesabirria Recipe!!!
A delicious and popular Mexican dish is Quesabirria, which includes tender and juicy beef, usually served in a crispy, cheesy quesadilla. Below is a recipe for Chicken Quesabirria, a chicken twist on the classic dish:
Ingredients:
For the chicken filling:
1 pound (about 450g) boneless, skinless chicken thighs, cut into bite-sized pieces
1 tablespoon vegetable oil
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
½ teaspoon chili powder
Salt and pepper to taste
+/– one cup of chicken broth.
For assembling the quesabirria:
Flour tortillas.
Shredded cheese (Monterey Jack or Oaxaca cheese).
Chopped fresh cilantro (garnish).
Sliced jalapeños (optional).
Lime wedges (to serve with).
Salsa or hot sauce.
Instructions:
In a large skillet or Dutch oven, heat the vegetable oil over medium-high heat. Add the chopped onion and cook until softened, about 3-4 minutes.
Add the minced garlic to the skillet and cook for an additional 1 minute, until fragrant.
Season the chicken thighs with ground cumin, smoked paprika, chili powder, salt, and pepper. Add the seasoned chicken to the skillet and cook until browned on all sides, about 5-6 minutes.
Pour the chicken broth into the skillet, scraping up any browned bits from the bottom of the pan. Bring the mixture to a simmer, then reduce the heat to low and let it simmer uncovered for about 20-25 minutes, or until the chicken is tender and cooked through. Remove the skillet from the heat and shred the chicken using two forks.
To assemble the quesabirria, heat a large skillet or griddle over medium heat. Place a flour tortilla on the skillet and sprinkle shredded cheese over half of the tortilla. Spoon some of the shredded chicken filling over the cheese, then fold the tortilla in half to enclose the filling.
Cook the quesabirria on the skillet for 2-3 minutes on each side, until golden brown and crispy, and the cheese is melted.
Repeat the process with the remaining tortillas, cheese, and chicken filling.
Once cooked, slice the quesabirria into wedges and garnish with chopped fresh cilantro. Serve hot with sliced jalapeños, lime wedges, salsa, or hot sauce on the side.
