Golden caramel tops a simple baked pudding!!!

 

Enter the comfortable realm of homemade pastry snacks with our basic bakery pudding which boasts of a good amount of golden caramel. This typical dessert represents warmth and luxury, it has got a rich custard base and a topping made from caramelized sugar.

All you need are several humble ingredients plus some cooking skills and voila! Ingredients:

   2 cups full-fat milk

   1/2 cup granulated sugar

   3 tablespoons corn flour

   2 big eggs

   1 tsp vanilla extract

   A pinch of salt

   For the caramel:

       1 cup granulated sugar

       1/4 cup water

 

Instructions:

   Combine granulated sugar and whole milk in a saucepan. Heat over medium flame until the mixture starts boiling, stirring occasionally. Remove from heat.

   In another bowl whisk cornstarch with eggs, vanilla extract and salt until smooth.

   Pour little by little warm milk mixture into egg mixture while still whisking continuously to temper them.

   Add gradually tempered egg mixture into remaining milk mixture on the saucepan while whisking continuously.

   Place the saucepan back on stove over medium flame. Cook pudding mixture for 5-7 minutes or until it thickens and coats the spoon back stirring always. Remove from heat.

   Make caramel; dissolve granulated sugar in water in a separate saucepan over medium-high heat swirling occasionally for about 5-7 minutes or until deep golden in color. Be careful not to burn it.

   Pour caramel into individual serving dishes or large baking dish swirling to coat bottom evenly.

   Slowly pour pudding mixture over caramel layer

  Refrigerate at least 2 hours or until set and chilled.

  To serve run knife around edge of pudding dish; invert onto plate release caramel layer on top.
