Ingredients:
4 cups all-purpose flour
1 tablespoon white sugar
2 ¼ teaspoons active dry yeast
1 ½ teaspoons salt
1 ½ cups warm water (about 110°F/45°C)
2 tablespoons olive oil or melted butter (plus extra for greasing)
Optional: sesame seeds, poppy seeds or oats for garnish
Directions:
Activate the yeast: Combine warm water and sugar in a small bowl, then stir until it froths for 5-10 minutes.
Mix dry ingredients together: Use a large mixing bowl to mix flour and salt well.
Combine wet and dry ingredients: Create a well in the center of the mixture of flour, pour activated yeast mixture into it together with olive oil or melted butter, and stir until dough forms.
Work the dough: Put the dough on a surface that has been sprinkled with flour, and work it with your hands for 8-10 minutes until it becomes smooth and stretchy. If preferred, you can also use stand mixer fitted with dough hook attachment during this stage.
First rise: Lightly grease a bowl before placing dough inside. Next cover it with clean kitchen towel or plastic wrap. Let rise at warm draft free place around 1-1.5 hours or until doubled its initial size.
Shape the dough: Once risen punch gently down so as release air from it then transfer onto lightly floured surface where should be shaped into single loaf pan alternatively divided into smaller portions for rolls etc.
Second rising: Put the shaped dough on a baking sheet lined with parchment paper or in a greased bread pan. Cover it with a kitchen towel or plastic wrap again and let it rise for 30-45 minutes until it inflates slightly.
Preheat oven: Preheat the oven to 375°F (190°C) while waiting for the dough to rise.
Optional toppings: If preferred, wet the surface of the risen dough and sprinkle some sesame seeds, poppy seeds, or oat meal on top.
Bake: Once the dough has completed its second rising, transfer it into the preheated oven and bake for 30-40 minutes until the crust turns into golden brown color and when you tap on its bottom side it will sound hollow which means that bread is cooked through.
Cool down and enjoy: Take out from the oven and cool on wire rack for at least half an hour before cutting into slices. Serve this homemade unsoured loaf alongside favorite spreads fillings or have as it is!
