Orange Loaf Cake !!!

A lovely orange loaf cake that combines the bright flavor of oranges with a moist texture commonly found in loaves: here is a simple recipe to help you get started.

 

Ingredients:

   A cup and a half of all-purpose flour

   One teaspoon baking powder

   0.5 tsp baking soda

   Salt to taste (a quarter teaspoon)

   Half a cup of softened unsalted butter

   A cup of sugar with grains

   Two big eggs

   1/2 a cup of sour cream (or plain yoghurt)

   The peels from two oranges.

   Freshly squeezed orange juice – 1/4 of a cup.

A single drop of vanilla extract.

 

Instructions:

   Have your oven preheated to 350°F (175°C).  Grease and flour a loaf pan measuring 9×5 inches, or if you prefer, line it with parchment paper so that your cake can be removed easily.

   Mix together the flour, baking powder, baking soda and salt in a medium bowl. Keep aside.

   In a large bowl mix softened butter and sugar till it turns out light and fluffy using hand mixer or stand mixer machine.

   Drop in the eggs one at a time, for each single egg is well mixed up. After that put in the smooth yogurt (or sour cream), orange zest, orange juice and vanilla extract.

   Add dry ingredients gradually into wet ingredients mixing just until blended. Avoid excessive stirring as it may toughen your loaf.

   Use a spatula to level the top of the batter once you pour it into prepared loaf pan.

   Bake for around 45-55 minutes in already preheated oven until toothpick inserted into its center comes out clean.

   Let the cake cool down in the pan for around ten minutes then transfer to wire rack completely cool off.

   Combine icing sugar with orange juice while waiting for your cake to cool. Optionally add orange zest to improve on taste of this cake glaze.

  Cover the cooled cake with poured glaze after all is done. Wait for some moments before cutting pieces of it because its frosting should solidify first.
