POTATO PUFFS!!!
This is a tried and true recipe !! if you want to satisfy your sweet tooth, you cannot go wrong here. This is the way my Mother always made, just give a shot it won’t fail you !
Work some magic on your mashed potatoes with mashed potato puffs! These loaded potato puffs will breathe some new life into your leftover mashed potatoes!
Let’s give thanks to eggs, sour cream, cheddar, Parmesan and chives for giving leftover mashed potatoes (Or fresh – if you don’t have any leftovers!) a new lease on life!

°3 mashed potatoes (type Manon, Bintje, Estima…)

°salt
°whipping cream 25 cl

Preheat the oven to thermostat 6/180°C.

Peel your potatoes and cut them into large wedges, then cook them over medium heat in a pan of salted water until they start to fall apart (about 20 min).

Separate the egg yolks from the whites and whisk your egg whites.

Bring whip cream to boil. Once the potatoes are cooked, pass them through a vegetable mill and incorporate the cream. Puree

In a bowl, mix the egg yolks with the apple puree
