Homemade Tapioca Pudding!!!

INGREDIENTS

½ cup sago, small pearls

4 cups of whole milk or skimmed milk

¾ cup granulated sugar

3 hen’s eggs

¾ cup granulated sugar, extra

1 teaspoon vanilla extract.

 

PREPARATION

Put the tapioca into a bowl and rinse it under running water. After that you need to put them back into a bowl and soak them for about an hour (45-60 minutes).

This is followed by adding milk with the first part of sugar in large saucepan. Slowly bring mixture to a simmer over medium heat. When bubbles start forming add the tapioca pearls and reduce heat to low simmering. Keep stirring until they are cooked for around fifteen to twenty minutes or become transparent.

While these beads are cooking, mix together eggs with the remaining three-fourth cupful of sugar in a medium-sized mixing bowl.

Gradually pour hot mixture onto egg while stirring continuously at the rate of approximately one-third per time, this process goes on until half way when hot mixture has been mixed with egg.

Use caution when pouring back egg contents into saucepan. Stir constantly as you pour it slowly.

Additionally cook for another three-five minutes or until pudding begins to be thick (it will continue to thicken as it cools).

Remove from heat and stir in vanilla. Then serve it cold after putting inside serving dishes.
