Refrigerator Cucumber Salad!!!

 

I made a bunch of fresh salads for our 1th of July celebration this year and decided to include this yummy favorite.

We adore the cool, sweet and tangy crunch of pickles so much that we often find ourselves wishing that we could just make a meal out of them. Well, we’ve come pretty close! This Refrigerator Cucumber Salad uses the same process for making a quick refrigerator pickle and adds a few other veggies for a healthy and yummy side dish that you can keep coming back to.

A refrigerator pickle is a method of pickling a vegetable without out any of the hassle of canning. You create a simple brine and pour it over your veggies and stick the whole thing in your fridge. Voila, pickles!To Make this Recipe You’ Will Need the following ingredients:

 

Ingredients :

°4 cucumbers, thinly sliced
°1 large red onion sliced
°1 large green bell pepper, sliced
°1 tablespoon of salt
°2 cups white vinegar
°1 1/2 cups sugar
°1 teaspoon celery flakes
°1 teaspoon red pepper flakes

 

DIRECTIONS:

Combine cucumbers, onions, peppers and salt; put aside.
Put the vinegar, sugar, celery flakes and chili flakes in a saucepan and bring to a boil. Removing from heat also adding 2 handfuls of ice to melted.
Place all vegetables in wide mouth jars (2 quart or 1 half gallon)
Pour the mixture over the cucumbers, store in the refrigerator.
Store for up to 2 months
Makes 2 quart jars
